Lazy Sunday

Typically I reserve Sundays for sleeping in, a big breakfast, and catching up with the family.  I try to do errands and chores on Saturday so I can rationalize doing a whole lot of nothing on Sundays.  Today was not my typical Sunday.  My little heart did not feel good last night, and the fifth time she got up (in 2 hours), I told her to just crawl in bed with us.  Of course that means that hubby and I are both hugging the edges of our King sized bed, while she sleeps comfortably in the middle.  I was surprised to wake up at 6:45 am, since I had only been asleep since 2am, but I got up, wrote out a grocery list, and that was the first step to my amazingly productive day.

 

My husband is a rescue diver for the county, and this weekend they have been clearing swim areas at the lake, so my lil’ heart and I joined them at Village Inn for a yummy breakfast, then went to get “real” coffee from our favorite coffee house.  On our way we came upon a little family out for a Sunday stroll.  Perhaps they were looking for a new ride?

After getting our coffee, we went grocery shopping.  I don’t really mind grocery shopping, but I do not like to do it on the weekends.  I thought that perhaps going early enough would spare us the crowds, and I was mostly right.  If I had only been in the store 20 minutes, it would have been perfect timing.  It took a bit longer than that, so it was getting crowded by the time we left.  We put away our groceries, but my productive streak still wasn’t finished (much to my surprise).  I cleaned bathrooms and litter box, did laundry, wrote cards and letters, packed up Mother’s Day gifts and replied to emails.  I even started dinner in the crock pot!

When I finally decided to sit down and check Facebook, Sabertooth was exhausted from watching me work, and needed a nap.  Another nap.  I wouldn’t give him my lap, so he took what he could get.  I don’t understand how cats can be comfortable and sleep almost anywhere!

Cinnamon Roll Crescents

This morning was one of those lazy mornings when I didn’t feel like making breakfast, so I decided to use crescent rolls.  I remembered seeing a recipe for cinnamon roll crescents that looked good, so I got on Pinterest and tracked it down.  (By the time I found it I could have had eggs and sausage done, probably.)

These look yummy and easy.  My problem is I only used about half the crescent rolls the recipe used, but made the filling for the whole batch.  Before you judge, I hadn’t had my coffee yet!

These were WAY messier than I thought they’d be, probably because when I tried to “soften” the butter, I fully melted it.  The melted butter made the filling runny – like messy runny – I even put it back in the freezer for a couple of minutes, but no, still runny.  I guess if I had been more patient it would have firmed up a bit, or if I had planned ahead and set out the butter it would have been softened to perfection.  But I digress – mine was runny.  Me + No Coffee + Hungry/Impatient = Big Mess.

I had enough filling left over to just spread it all over the top of the rolled up crescents.  That worked beautifully, and truly, if I had made an additional glaze the original recipe called for I could have propelled myself into a sugar coma after about three bites.

The original recipe was from Jennifer’s cooking blog over at Jennifer Cooks.  Maybe next time I will prepare the butter in advance or put it in the microwave for less than 25 seconds, but honestly, these things were rich, squishy heaven.  A totally unhealthy breakfast!  And I loved it! I’ll eat yogurt and fruit for lunch.
